Wash and peel (optional) the potatoes, then cut them into thin fries or wedges.
Toss the potato slices with olive oil, salt, and pepper (and any optional seasonings).
Spread the potatoes in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through, until crispy and golden brown.
2. Cook the Burgers:
While the fries are baking, form the ground beef into 4 equal-sized patties.
Season both sides with salt and pepper.
Heat a grill or skillet over medium-high heat and add a little olive oil.
Cook the patties for 4-5 minutes per side for medium doneness (or longer if you prefer them well-done).
During the last minute of cooking, place a slice of cheese on each patty and cover the pan with a lid to melt the cheese.
