Citrus Shrimp and Avocado Salad

If using fresh shrimp, pan-sear them in a hot skillet with a little olive oil and a squeeze of lemon or orange juice until pink and cooked through. If using leftover shrimp, just warm them up in a pan with a bit of citrus juice.

2. Toss the Salad
In a large bowl, toss together your choice of salad greens, the prepared citrus shrimp, and a drizzle of extra virgin olive oil. Add the fresh citrus juice from either the lemon or orange, then toss lightly to combine.

3. Add the Avocado and Almonds
Add the diced or sliced avocado, minced shallots, and toasted sliced almonds to the salad. Toss again gently to incorporate all the ingredients.

4. Season and Serve
Season the salad with kosher salt and freshly ground black pepper to taste. Serve immediately for the best texture and flavor.
