Citrus-Infused Sweet Potato Delight: A Refreshing Twist on a Classic

Cook the Sweet Potatoes: In a large pot, bring salted water to a boil. Add the cubed sweet potatoes and cook for about 10-15 minutes, or until they are fork-tender. Drain and set aside.
Prepare the Citrus: While the sweet potatoes are cooking, zest and juice the orange and lemon. Set the zest aside and juice both fruits into a small bowl.
Flavor the Potatoes: In a large pan, heat the olive oil (or melt the butter) over medium heat. Add the cooked sweet potatoes and sauté for 2-3 minutes until they are slightly caramelized and golden.
Add the Citrus Infusion: Pour the citrus juice over the sweet potatoes, followed by the zest of both the orange and lemon. Stir in the honey (or maple syrup), cinnamon, ginger, salt, and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld together and the sweet potatoes to absorb the citrusy goodness.
Serve: Transfer the sweet potatoes to a serving dish and garnish with fresh cilantro or mint for a pop of color and added freshness. Sprinkle with chopped pistachios or walnuts for a delightful crunch.
Enjoy: Serve warm as a side dish with your favorite main course and enjoy the perfect combination of citrus and sweet potatoes!
