Citrus-Infused Sweet Potato Delight: A Refreshing Twist on a Classic

Cook the Sweet Potatoes: In a large pot, bring salted water to a boil. Add the cubed sweet potatoes and cook for about 10-15 minutes, or until they are fork-tender. Drain and set aside.
Prepare the Citrus: While the sweet potatoes are cooking, zest and juice the orange and lemon. Set the zest aside and juice both fruits into a small bowl.
