Cinnamon Sugar Cheesecake Tortilla Bites – A Sweet & Crispy Delight!

In a medium mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and heavy cream.
Beat with a hand mixer or whisk until the mixture is smooth and creamy. Adjust the consistency with more cream if needed to achieve a spreadable consistency.
Set the cheesecake filling aside.
Step 2: Cut and Prepare the Tortillas
Use a sharp knife or pizza cutter to cut each flour tortilla into 4 equal triangles (like cutting a pizza).
Brush both sides of each tortilla triangle with the melted butter.
Step 3: Fill the Tortillas
Place a small spoonful of the cheesecake filling in the center of each tortilla triangle.
Gently fold the tortilla in half over the filling to form a half-moon shape, making sure the edges are sealed.
If necessary, use a fork to press down the edges and ensure the filling doesn’t spill out.
Step 4: Fry the Tortilla Bites
In a large frying pan or skillet, heat about 1 inch of vegetable oil over medium heat until hot.
Fry the tortilla bites in batches, turning them occasionally, for about 2-3 minutes or until they are golden brown and crispy.
Remove the bites from the oil and drain on paper towels to remove excess oil.
Step 5: Coat in Cinnamon Sugar
In a small bowl, mix together the granulated sugar and cinnamon.
While the tortilla bites are still warm, toss them in the cinnamon sugar mixture, coating them thoroughly.
Step 6: Serve
Serve the Cinnamon Sugar Cheesecake Tortilla Bites warm, either as a standalone dessert or with a scoop of vanilla ice cream on the side.
Garnish with a dusting of powdered sugar or a drizzle of chocolate sauce if desired.
