Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, sift together the flour, baking powder, baking soda, salt, cocoa powder, and sugar.
In another bowl, whisk together the eggs, milk, oil, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients and mix until combined.
Slowly add the boiling water to the batter and stir to incorporate. The batter will be thin, but this is normal.
2. Bake the Cake:
Divide the batter evenly between the two prepared cake pans.
Bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
3. Make the Strawberry Filling:
In a small saucepan, combine the sliced strawberries, sugar, and lemon juice. Cook over medium heat for 5-7 minutes until the strawberries have softened and released their juices.
In a small bowl, mix the cornstarch and water together to form a slurry. Add this mixture to the saucepan and cook for another 2-3 minutes, stirring constantly, until the filling thickens.
Remove from heat and let it cool to room temperature.
4. Make the Chocolate Ganache:
In a heatproof bowl, add the chopped chocolate.
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer (do not boil).
Pour the hot cream over the chocolate and let it sit for 2-3 minutes, then stir until smooth and glossy.
Stir in the butter until fully incorporated. Let the ganache cool slightly before using.
5. Assemble the Cake:
Once the cakes have cooled, place one layer on a serving plate.
Spread the strawberry filling evenly over the top of the first cake layer.
Place the second cake layer on top and gently press down.
Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides for a beautiful effect.
Garnish with fresh strawberries and whipped cream if desired.
6. Serve:
Slice the cake into generous pieces and serve. Enjoy the rich, chocolatey goodness paired with the sweet, fruity strawberry filling!
