Chocolate Covered Mint Patties

In a mixing bowl, combine the powdered sugar and butter. Stir until smooth and fully combined.
Add the peppermint extract and heavy cream, mixing until a thick dough forms. If the mixture is too thick, add a little more cream, 1 tablespoon at a time, until it reaches a smooth and moldable consistency.
Step 2: Shape the Patties
Roll the mint mixture into small balls (about 1 inch in diameter) and then flatten them into patties.
Place the patties on a parchment-lined baking sheet. Refrigerate them for 20-30 minutes to set.
Step 3: Coat with Chocolate
In a microwave-safe bowl, melt the semi-sweet chocolate chips and vegetable oil together. Heat in 30-second intervals, stirring after each interval, until the chocolate is smooth and fully melted.
Dip each chilled mint patty into the melted chocolate, ensuring it is fully coated.
Return the chocolate-covered patties to the parchment-lined sheet and refrigerate until the chocolate hardens (about 1 hour).
