Chocolate Covered Date and Oat Energy Balls: A Sweet and Healthy Snack

Blend the Dates: In a food processor, combine the pitted dates and pulse until finely chopped. You may need to scrape down the sides to make sure they are evenly chopped.
Add the Oats and Nuts: Add the rolled oats, almond butter, shredded coconut (if using), chopped nuts, chia seeds, vanilla extract, and salt to the food processor. Pulse again until the mixture begins to come together and is sticky.
Test the Texture: Take a small amount of the mixture and press it together. If it holds its shape, it’s ready. If not, add a little more almond butter and pulse until combined.
Step 2: Form the Energy Balls

Shape the Balls: Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands. Place them on a parchment-lined baking sheet or tray. Continue until all the mixture is used up.
Step 3: Melt the Chocolate

Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips with the coconut oil in 30-second intervals, stirring in between, until smooth and fully melted.
Step 4: Coat the Energy Balls

Dip the Balls: Carefully dip each energy ball into the melted chocolate, making sure it’s fully coated. Use a fork to lift the ball out of the chocolate, letting any excess drip off.
Place on Tray: Return the coated balls to the parchment-lined tray and repeat with the remaining balls.
Step 5: Let the Chocolate Set

Cool: Place the tray in the refrigerator or freezer for about 15-20 minutes, or until the chocolate hardens and the energy balls are firm.
Step 6: Serve and Enjoy

Serve: Once the chocolate is set, enjoy these delicious, energizing bites! They can be stored in an airtight container in the fridge for up to 2 weeks.
