Chocolate Chip Carrot Cake Bites: A Sweet Twist on a Classic

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or silicone baking mats for easy cleanup.

Prepare the Dry Ingredients:
In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.

Mix the Wet Ingredients:
In a large bowl, beat together the granulated sugar, brown sugar, and vegetable oil until smooth. Add the eggs and vanilla extract, beating until well combined.

Combine the Ingredients:
Gradually stir the dry ingredients into the wet ingredients, mixing until just combined. Fold in the grated carrots, mini chocolate chips, and nuts (if using).

Form the Bites:
Scoop out tablespoon-sized portions of the batter and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.

Bake the Bites:
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown, and the bites are set in the middle. They should feel firm but slightly soft when touched.

Cool and Serve:
Let the chocolate chip carrot cake bites cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
