Chicken Thighs with Garlic Sauce

Preheat the oven to 400°F (200°C).

Pat the chicken thighs dry with paper towels and season them generously with salt and pepper on both sides.

Cook the Chicken:

In an oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken thighs, skin side down, and cook for 5-7 minutes, until the skin is crispy and golden brown.

Flip the chicken thighs over and cook for another 5 minutes on the other side.

Make the Garlic Sauce:

Add butter to the skillet with the chicken, allowing it to melt.

Add the minced garlic and cook for 1-2 minutes, until fragrant, but be careful not to burn it.

Add the chicken broth (or water) and stir to combine. Add the lemon juice and thyme (if using), and bring the sauce to a simmer.

Finish Cooking in the Oven:

Place the skillet in the preheated oven and bake the chicken for 15-20 minutes, or until the internal temperature reaches 165°F (75°C) and the chicken is fully cooked.

Serve:

Remove the skillet from the oven and spoon some of the garlic sauce over the chicken.

Garnish with fresh parsley and serve immediately.
