Chicken Spinach and Mushroom Low Carb Oven Dish: A Hearty and Healthy Meal

Preheat your oven to 375°F (190°C) and lightly grease a baking dish with cooking spray or olive oil.
Prepare the Chicken:

Season the chicken breasts with a dash of pepper and Herb and Garlic seasoning.
Heat the olive oil in a large skillet over medium heat and sear the chicken breasts on both sides until golden brown (about 3-4 minutes per side). The chicken will not be fully cooked yet, but it will finish cooking in the oven.
Prepare the Mushroom and Spinach Mixture:

In the same skillet, add the sliced mushrooms and cook for about 5 minutes until softened.
Add the fresh spinach to the skillet and cook until wilted, stirring occasionally.
Stir in the chicken broth and cook for an additional 2-3 minutes to combine the flavors.
Assemble the Dish:

Spread a thin layer of the green onion cream cheese in the bottom of the prepared baking dish.
Layer the partially cooked chicken breasts on top of the cream cheese.
Spoon the mushroom and spinach mixture over the chicken.
Top with Cheese:

Sprinkle the shredded mozzarella cheese evenly over the top of the dish.
Bake the Dish:

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
After 25 minutes, remove the foil and bake for an additional 5-10 minutes until the chicken is fully cooked through (internal temperature should reach 165°F) and the cheese is melted and bubbly.
Serve and Enjoy:

Once baked, remove from the oven and let it cool slightly before serving. Enjoy this flavorful, low-carb dish with a side of cauliflower rice or roasted vegetables.
