Chicken Scampi with Garlic Parmesan Rice

Season the chicken strips with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Add the chicken and cook until golden and cooked through, about 6-7 minutes. Remove the chicken from the skillet and set aside.
Step 2: Prepare the Sauce
In the same skillet, sauté the minced garlic for about 1 minute until fragrant.
Add the chicken broth, lemon juice, and white wine (if using). Bring the mixture to a simmer and let it reduce slightly, about 3-4 minutes.
Step 3: Finish the Sauce
Stir in the butter and let it melt. Return the chicken to the skillet, tossing it in the sauce to coat. Sprinkle with chopped parsley and set the pan aside.
Step 4: Cook the Garlic Parmesan Rice
In a separate saucepan, combine the rice, chicken broth, and minced garlic. Bring it to a boil, then reduce the heat, cover, and cook for 15-18 minutes or until the rice is tender and the liquid is absorbed.
Step 5: Add Cheese and Fluff the Rice
Once the rice is cooked, stir in the grated Parmesan and season with salt and pepper to taste. Fluff the rice with a fork.
Step 6: Serve
Plate the rice, top with the chicken and sauce, and garnish with more chopped parsley.
