Chicken Parmesan Grilled Cheese Sandwich: A Delicious Twist on a Classic

Prepare the Chicken: Start by breading and cooking your chicken breast. You can either fry or bake the chicken. To bread the chicken, dip it in flour, then in beaten egg, and coat it with breadcrumbs (seasoned with a pinch of salt and pepper). If frying, cook the chicken in a skillet with oil until golden and crispy on both sides. If baking, bake at 375°F (190°C) for 25-30 minutes until cooked through and crispy.
Assemble the Sandwich: Once the chicken is cooked, place one slice of mozzarella cheese on each slice of bread. Add the chicken breast on one slice of bread, followed by a generous spoonful of marinara sauce. Optionally, sprinkle grated Parmesan cheese on top of the sauce for extra flavor.
Grill the Sandwich: Heat a skillet over medium heat and add 1 tablespoon of butter. Place the assembled sandwich in the skillet, pressing down gently with a spatula. Cook for 3-4 minutes per side, until the bread is golden brown and the cheese has melted. Be sure to adjust the heat if the bread is browning too quickly before the cheese has melted.
Serve: Remove the sandwich from the skillet, slice it in half, and garnish with fresh basil for a touch of color and flavor. Serve immediately with a side of extra marinara sauce for dipping.
