Cook the Chicken:
Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, until golden brown and cooked through. Once cooked, remove the chicken from the skillet and set it aside.
Make the Sauce:
In the same skillet, melt the butter over medium heat. Add the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream and let the sauce simmer for 2-3 minutes, until it thickens.
Combine and Serve:
Return the chicken to the skillet and coat it with the sauce. Let it simmer for another 2 minutes to absorb all the flavors. Garnish with fresh parsley before serving.
