Chicken in a Creamy Cheese Sauce with Vegetables – The Perfect Hassle-Free Dinner!


Season the chicken fillets with curry powder, salt, and pepper to taste. Heat a pan over medium-high heat and cook the chicken fillets for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove from the pan and set aside.

Step 2: Prepare the Vegetables
While the chicken is cooking, chop the ramiro pepper, zucchini, and onion into small, bite-sized pieces. Mince the garlic cloves.

Step 3: Cook the Vegetables
In the same pan, add a little bit of oil if needed. Sauté the chopped onion and garlic until soft and fragrant, about 2-3 minutes. Then, add the ramiro pepper and zucchini, and cook for another 5 minutes until the vegetables are tender.

Step 4: Make the Creamy Sauce
Lower the heat and stir in the sour cream and mayonnaise. Add the shredded cheese (reserve a little mozzarella for topping) and stir until the cheese melts and the sauce becomes creamy. Season with a pinch of salt, pepper, and a bit of extra curry powder if desired.

Step 5: Combine and Melt the Cheese
Slice the cooked chicken fillets into strips or chunks and return them to the pan. Toss the chicken in the creamy cheese sauce and vegetables to coat evenly. Sprinkle the remaining mozzarella cheese over the top and cover the pan to melt the cheese for 2-3 minutes.

Step 6: Garnish and Serve
Garnish the dish with freshly chopped green onions and dill for an added touch of freshness. Serve hot with rice, mashed potatoes, or a side of your choice.
