Chicken and Potato Bake

Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or line it with parchment paper for easy cleanup.
2. Prepare the Chicken and Potatoes:

In a large bowl, toss the cubed potatoes with 1 tablespoon of olive oil, garlic powder, onion powder, paprika, thyme, rosemary, salt, and pepper. Spread the seasoned potatoes in an even layer at the bottom of the baking dish.
In the same bowl, coat the chicken breasts with the remaining tablespoon of olive oil, and season with salt, pepper, and a sprinkle of paprika and garlic powder. Place the chicken breasts on top of the seasoned potatoes.
3. Bake:

Place the baking dish in the oven and bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender when pierced with a fork.
If you like a crispy finish, you can broil the dish for an additional 2-3 minutes at the end to get the chicken and potatoes nicely browned.
4. Add Parmesan (Optional):

About 5 minutes before the dish is done, sprinkle grated Parmesan cheese over the chicken and potatoes for added flavor and a golden, cheesy crust.
5. Garnish and Serve:

Once the chicken and potatoes are fully cooked, remove the baking dish from the oven and let it rest for a few minutes.
Garnish with freshly chopped parsley before serving.
