Cherries in the Snow: A Delightful Winter Dessert

If using fresh cherries, wash and pit them. If using frozen, thaw them and drain excess liquid.
In a large mixing bowl, combine the cherries with 2 tbsp of powdered sugar. Gently stir and set aside to macerate for 15 minutes, allowing the cherries to release their juice.
In a separate bowl, whip the heavy cream with the remaining powdered sugar, vanilla extract, and almond extract (if using) until stiff peaks form.
Gently fold the whipped cream into the macerated cherries, mixing until well combined. Be careful not to deflate the whipped cream.
Spoon the mixture into serving bowls or glasses, and garnish with crushed graham crackers or shortbread cookies for added texture.
Chill the dessert in the refrigerator for at least 2 hours before serving, allowing the flavors to meld together.
