Preheat your oven to 375°F (190°C).
Wash and peel the potatoes, then cut them in half lengthwise. Scoop out a bit of the center to create space for the filling.
Brush the potatoes with vegetable oil and season with salt.
Place them on a baking sheet and bake for 25-30 minutes until they are tender but still firm.
Make the Meat Filling:
In a pan, heat 2 tablespoons of vegetable oil over medium heat.
Add the chopped onion and grated garlic, and sauté until fragrant.
Stir in the ground meat, breaking it apart with a spatula. Cook until browned.
Add paprika, salt, black pepper, and dried oregano. Stir well.
Mix in the tomato paste and ¼ cup of water, then simmer for 5 minutes until thickened.
Stuff and Bake:
Remove the potatoes from the oven and fill each one with the cooked meat mixture.
Sprinkle shredded mozzarella cheese over the top.
Return to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly.
Serve and Enjoy:
Let the stuffed potatoes cool for a few minutes before serving.
Garnish with fresh parsley or a drizzle of sour cream if desired.
