Cheesy Stuffed Potato Pancakes

In a large pot, boil water and add the peeled, cubed potatoes.
Boil for 10-12 minutes or until fork-tender.
Drain and mash until smooth, then allow to cool for a few minutes.
2️⃣ Make the Pancake Mixture:

Once the mashed potatoes have cooled slightly, stir in the shredded cheddar, Parmesan, garlic powder, onion powder, egg, and breadcrumbs.
Season with salt and pepper and mix until well combined.
3️⃣ Prepare the Cheesy Filling:

In a small bowl, mix together the shredded mozzarella and cream cheese.
Add chopped parsley, if desired.
4️⃣ Form the Pancakes:

Take 2-3 tablespoons of the potato mixture and flatten it in your hand to form a small patty.
Place a spoonful of the cheese filling in the center, then carefully fold the edges of the potato mixture around the cheese, sealing it inside.
Roll each stuffed pancake in breadcrumbs to create a crispy coating.
5️⃣ Fry the Potato Pancakes:

Heat vegetable oil in a large skillet over medium-high heat.
Carefully add the stuffed potato pancakes and fry for 3-4 minutes per side, or until golden brown and crispy.
Transfer to a paper towel-lined plate to drain excess oil.
6️⃣ Serve & Enjoy:

Serve warm with sour cream, ketchup, or a fresh salad.
