Place the chicken breasts or thighs in the bottom of your slow cooker.
Sprinkle the taco seasoning mix over the chicken and add the cumin, chili powder, garlic powder, onion powder, salt, and pepper.
Add the Salsa and Broth:
Pour the salsa and chicken broth over the chicken. Squeeze in the lime juice and stir to combine.
Cook the Chicken:
Cover the slow cooker and cook on low for 6-7 hours, or until the chicken is fully cooked and tender enough to shred with a fork. If you’re short on time, you can cook on high for 3-4 hours.
Shred the Chicken:
Once the chicken is done, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir it in with the juices.
Add the Cheese:
Sprinkle the shredded cheese over the chicken and cover the slow cooker again. Let it cook for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Assemble the Tacos:
Warm the taco shells or tortillas in the oven or on the stove.
Spoon the cheesy shredded chicken into each taco shell and add your favorite toppings.
