Cheesy Potato Strips with Creamy Cheese Sauce – A Comfort Food Delight

Peel and cut the potatoes into thin strips. Place them on a baking sheet lined with parchment paper.
Drizzle with a little olive oil, sprinkle with salt and black pepper, and toss to coat.
Roast in the oven for about 25-30 minutes, flipping halfway through, until golden and crispy.
Step 2: Sauté the Vegetables
While the potatoes are baking, heat a small amount of olive oil in a skillet over medium heat.
Add the onion, garlic, and red bell pepper to the pan and sauté for about 5-7 minutes, until softened and fragrant.
Step 3: Make the Creamy Cheese Sauce
In a separate saucepan, melt the butter over medium heat.
Stir in the flour and cook for about 1-2 minutes until it forms a roux.
Gradually whisk in the milk, and continue whisking until the sauce thickens, about 3-5 minutes.
Lower the heat and stir in the reserved 50 g of cheese. Stir until smooth, and season with salt and pepper to taste.
Step 4: Assemble and Serve
Once the potato strips are ready, place them on a serving platter and sprinkle with chopped parsley.
Pour the creamy cheese sauce over the potato strips, or serve it on the side for dipping.
Serve hot and enjoy the cheesy, crispy goodness!
