Cheesy Mashed Potato Puffs: Crispy, Creamy, and Irresistible

Preheat your oven to 375°F (190°C). Grease a mini muffin tin or baking sheet with olive oil spray or melted butter.
Prepare the Potato Mixture:

In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, Parmesan, beaten egg, sour cream (if using), garlic powder, onion powder, black pepper, and salt. Stir until everything is well mixed.
Shape the Puffs:

Using a spoon or your hands, scoop out about 1 tablespoon of the potato mixture and roll it into a ball. Roll each ball in breadcrumbs, then place it into the muffin tin or on the baking sheet. Repeat with the remaining mixture.
Bake the Puffs:

Lightly spray the puffs with olive oil or brush with melted butter. Bake in the preheated oven for 20–25 minutes, or until they are golden brown and crispy on the outside.
Serve:

Let the puffs cool slightly before serving. Garnish with chopped fresh parsley, if desired. Serve hot as a side dish, appetizer, or snack.
