Cheesy Ground Beef and Rice Casserole

Set your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Cook the Beef and Aromatics:

In a large skillet over medium heat, cook the ground beef until browned.
Add the diced onion and garlic, cooking until softened. Drain excess grease if necessary.
Add Rice and Liquids:

Stir in the uncooked rice, beef broth, diced tomatoes, Italian seasoning, salt, and pepper.
Bring to a gentle simmer, then remove from heat.
Assemble the Casserole:

Transfer the mixture to the greased baking dish and cover with foil.
Bake:

Bake for 30-35 minutes, or until the rice is tender and the liquid is absorbed.
Add Cheese and Sour Cream:

Remove the casserole from the oven and stir in 1 cup of shredded cheese and the sour cream.
Sprinkle the remaining cheese on top.
Melt the Cheese:

Return to the oven, uncovered, and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
Serve:

Let it rest for a few minutes before serving. Enjoy warm!
