Preheat your oven to 375°F (190°C).
Using a sharp knife, carefully cut a pocket into the side of each chicken breast, making sure not to cut all the way through. Season the chicken breasts with salt and pepper on both sides.
Step 2: Make the Mushroom Filling
In a large skillet, heat olive oil and butter over medium heat.
Add the chopped mushrooms and cook for 5-7 minutes, until the mushrooms release their moisture and become golden brown.
Add the minced garlic and cook for an additional minute until fragrant.
Remove from heat and stir in the cream cheese, mozzarella, Parmesan, dried thyme, salt, and pepper until the mixture is creamy and well combined.
Step 3: Stuff the Chicken
Carefully stuff each chicken breast with the mushroom and cheese mixture, ensuring the filling is evenly distributed. Secure the opening with toothpicks to hold the filling in place.
Step 4: Sear the Chicken
In the same skillet, heat a little more olive oil over medium-high heat.
Sear the stuffed chicken breasts for 3-4 minutes on each side, until golden brown.
Step 5: Bake the Chicken
Transfer the seared chicken breasts to a baking dish and place them in the oven.
Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
Step 6: Serve and Garnish
Remove the toothpicks from the chicken and garnish with freshly chopped parsley before serving.
