Preheat the oven to 425°F (220°C).
Toss the cut potatoes with olive oil, salt, pepper, and paprika (if using). Spread them in a single layer on a baking sheet.
Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy. Once cooked, set aside.
Cook the Beef Filling:
In a large skillet, cook the ground beef over medium heat, breaking it apart with a spoon as it cooks.
Once the beef is browned and cooked through, add the chopped onion and garlic. Cook for 2-3 minutes, until the onion softens.
Stir in the taco seasoning and water, and simmer for 5-7 minutes, until the mixture thickens. Season with salt and pepper to taste. Set aside.
Assemble the Burritos:
Warm the flour tortillas in the microwave or on a skillet for a few seconds until soft and pliable.
Place a few spoonfuls of the beef mixture in the center of each tortilla.
Add a generous amount of crispy fries on top of the beef.
Sprinkle with shredded cheese and a dollop of sour cream if desired.
Roll up the tortilla, folding in the sides and rolling tightly to secure the filling.

Serve the cheesy beef burritos with a side of salsa, guacamole, or extra sour cream for dipping.
