For fresh fries, cut the potatoes into strips and toss them with olive oil, garlic powder, paprika, and salt.
Arrange the fries in a single layer on a baking sheet (or directly in a skillet) and bake for 20-25 minutes, flipping halfway through, until golden and crispy. If using frozen fries, follow the package instructions for baking. Set aside once cooked.
Step 2: Cook the Beef Filling
While the fries are cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the chopped onion and garlic, and cook for 2-3 minutes until softened.
Add the ground beef to the skillet, breaking it up with a spatula. Cook for 5-6 minutes, or until browned and fully cooked.
Stir in the taco seasoning, cumin, paprika, salt, and pepper. Add the water or beef broth and simmer for 2-3 minutes until the mixture thickens and becomes fragrant.
Remove from heat and stir in the shredded cheddar cheese until melted and incorporated.
Step 3: Assemble the Burritos
Warm the flour tortillas in a dry skillet for about 30 seconds per side or microwave them for 20 seconds to make them more pliable.
Place a tortilla on a flat surface and spoon a generous amount of the beef mixture into the center.
Top with a few fries, sour cream, salsa, guacamole, and shredded lettuce, if desired.
Fold in the sides of the tortilla and roll it up tightly to form a burrito. Repeat with the remaining tortillas and filling.
Step 4: Serve
Slice the burritos in half and serve with extra fries on the side.
Add more salsa, sour cream, or guacamole for dipping, and enjoy!
