Cheesecake Stuffed Chocolate Chip Cookies

In a medium bowl, beat the cream cheese until smooth using a hand mixer or stand mixer.
Add the powdered sugar and vanilla extract, and mix until well combined.
Transfer the cheesecake mixture into a small bowl and refrigerate for at least 30 minutes to firm up.
Step 2: Make the Cookie Dough
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the egg and vanilla extract, and beat until combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until combined.
Fold in the chocolate chips.
Step 3: Stuff the Cookies
Take about 1 tablespoon of cookie dough and flatten it into a disk on your palm.
Add about 1 tablespoon of the chilled cheesecake filling into the center of the dough disk.
Take another tablespoon of cookie dough, flatten it out, and place it over the cheesecake filling to cover it.
Seal the edges of the dough together to encase the cheesecake filling completely.
Roll the stuffed dough ball into a smooth ball and place it on the prepared baking sheet.
Step 4: Bake the Cookies
Bake the cookies for 12-15 minutes, or until the edges are golden brown, but the centers are still soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
