Cheesecake Bites Recipe

Crush the biscuits into fine crumbs using a food processor or by placing them in a sealed bag and crushing them with a rolling pin.

In a bowl, combine the crushed biscuits with the melted butter and mix until well combined.

Press the mixture into the base of a lined baking tray or silicone molds to form a firm crust. Refrigerate while you prepare the filling.

Make the Cheesecake Filling:

In a large bowl, beat the cream cheese and sugar together until smooth and creamy.

Once combined, scoop out spoonfuls of the cheesecake mixture and form small balls. Place each ball on top of the biscuit base in your molds or tray.

Refrigerate for at least 2-3 hours until the cheesecake bites firm up.

Coat with Chocolate:

Melt the chocolate in a microwave-safe bowl in short bursts, stirring in between until smooth.

Once the cheesecake bites are set, dip each bite into the melted chocolate, ensuring they’re fully coated.

Return the bites to the fridge for an additional 30 minutes, allowing the chocolate to harden.
