Cheesecake Banana Pudding Bites: A Fun Twist on a Classic Favorite

In a large mixing bowl, beat the softened cream cheese until smooth.
Add the powdered sugar and vanilla extract, and continue to beat until the mixture is well combined.
Slowly add the heavy cream and lemon juice (if using) and beat on medium speed until the cheesecake mixture is fluffy and smooth. Set aside.
Prepare the Banana Pudding Layer

In a small bowl, combine the vanilla pudding mix with the milk according to the package instructions (use instant pudding for a quicker version).
Stir in the vanilla extract and let the pudding set for about 5 minutes, or until thickened.
If desired, fold in whipped cream to make the banana pudding layer extra light and airy.
Assemble the Bites

Place a vanilla wafer cookie in the bottom of each mini muffin tin or a small serving dish.
Spoon a small amount of the cheesecake layer onto the cookie, smoothing it out evenly.
Add a slice or two of banana on top of the cheesecake layer.
Spoon a small amount of the banana pudding mixture over the banana slices, covering them completely.
Top with another vanilla wafer cookie, pressing down gently to form a mini sandwich.
Chill and Serve

Refrigerate the cheesecake banana pudding bites for at least 2 hours to allow the layers to set and meld together.
Just before serving, garnish with extra banana slices and a sprinkle of crushed vanilla wafers or graham crackers for added texture.
