Divide the meat mixture into 12 equal portions.
Flatten each portion into a thin patty and place about 1 tablespoon of shredded cheddar cheese in the center.
Carefully fold the edges of the patty around the cheese, sealing it inside, and form the mixture into a ball. Repeat with the remaining portions.
Cook the Meatballs:
Heat a skillet over medium heat and add a little oil.
Carefully place the meatballs in the skillet, making sure they are not overcrowded. Sear the meatballs for 2-3 minutes on each side, or until they’re browned.
Transfer the seared meatballs to a baking sheet and bake in the preheated oven for 10-12 minutes, or until they reach an internal temperature of 160°F (71°C).

Once the meatballs are cooked through, remove them from the oven.
Top with chopped pickles and onions for an extra burst of flavor, if desired. Serve with ketchup and mustard on the side for dipping.
