In a small bowl, dissolve the sugar in warm water. Sprinkle the yeast over the top and let it sit for 5-10 minutes, until the mixture becomes frothy and bubbly.
Prepare the Dough:
In a large mixing bowl, combine the flour and salt. Add the activated yeast mixture and olive oil, stirring until a dough begins to form. Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic. If using a stand mixer, use the dough hook attachment to knead the dough.
Let the Dough Rise:
Place the dough in a lightly oiled bowl and cover it with a clean towel. Let it rise in a warm place for 1-1.5 hours, or until it has doubled in size.
Shape the Breadsticks:
Preheat the oven to 375°F (190°C). Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a rectangle about 1/2 inch thick. Cut the dough into strips, approximately 1 inch wide, using a sharp knife or pizza cutter.
Add the Cheese and Garlic:
Place the breadsticks on a greased or parchment-lined baking sheet. Brush them with melted butter and sprinkle with garlic powder, followed by the mozzarella and Parmesan cheeses. For an extra garlic kick, you can sprinkle more garlic powder or minced fresh garlic on top.
Bake:
Bake the breadsticks for 12-15 minutes, or until they are golden brown and the cheese is melted and bubbly.
Serve:
Remove from the oven and brush with additional melted butter, if desired. Garnish with fresh chopped parsley and serve hot.
