Cheese and Herb Stuffed Flatbread: A Flavorful and Flaky Delight

In a large mixing bowl, combine the flour, sugar, salt, and yeast.
Add the warm water, olive oil, and yogurt (if using), and mix until a dough forms.
Knead the dough on a lightly floured surface for 5-7 minutes, or until it becomes smooth and elastic. If the dough is too sticky, add a little more flour.
Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise for about 1 hour or until doubled in size.
Make the Cheese and Herb Filling:

In a medium bowl, combine the mozzarella, feta, Parmesan, parsley, thyme, oregano, and garlic. Season with a pinch of salt and pepper. Mix everything together until the cheese is well distributed with the herbs.
Assemble the Flatbread:

Once the dough has risen, punch it down and divide it into 4 equal portions.
Roll each portion into a ball, then flatten each ball into a small disk (about 6 inches in diameter) using a rolling pin.
Place a generous spoonful of the cheese and herb mixture in the center of each dough disk.
Fold the edges of the dough over the filling to create a sealed pouch. Pinch the edges together to close the flatbread securely.
Carefully roll the stuffed dough ball into a flat disk again, ensuring the filling stays inside.
Cook the Flatbread:

Heat a cast-iron skillet or non-stick frying pan over medium heat.
Brush both sides of the stuffed flatbreads with olive oil, then place them in the pan one at a time.
Cook for 3-4 minutes on each side, or until the flatbread is golden brown and crispy. You may need to adjust the heat to ensure the flatbreads cook evenly without burning.
Repeat with the remaining stuffed flatbreads.
Serve:

Serve the cheese and herb stuffed flatbreads warm, either on their own or with a side of tomato sauce, yogurt, or a fresh salad. Enjoy the flaky, cheesy goodness with every bite!
