Prep the Dates: If your dates are dry, soak them in warm water for 10 minutes, then drain.
Blend Ingredients: In a food processor, combine oats, dates, carrots, nuts, coconut, and spices. Pulse until finely chopped and the mixture begins to stick together.
Add Flavor & Moisture: Add vanilla extract, a pinch of salt, and nut butter. Blend again. If the mixture is too dry, add maple syrup or a tiny splash of water.
Form Balls: Scoop out the mixture and roll into 1-inch balls using your hands.
Chill: Place on a baking sheet or plate and chill in the fridge for 30 minutes to firm up.
