Prepare the Cereal:
In a large mixing bowl, pour the Crispix cereal. Set it aside while you prepare the caramel sauce.
Make the Caramel Sauce:
In a medium saucepan, melt the butter over medium heat. Once melted, stir in the brown sugar and corn syrup. Bring the mixture to a gentle boil, stirring constantly. Let it boil for about 3-4 minutes, making sure the sugar is fully dissolved and the mixture is smooth.
Add Vanilla and Baking Soda:
Remove the saucepan from the heat and stir in the vanilla extract and baking soda. The baking soda will make the caramel bubble up, so be careful. This will create a lighter, crispier texture for the coating.
Coat the Cereal:
Pour the caramel sauce over the Crispix cereal, stirring gently to coat all of the cereal evenly. Make sure each piece of cereal is coated in the caramel sauce.
Bake the Caramel Crispix:
Spread the caramel-coated cereal onto the prepared baking sheet in an even layer. Bake the cereal in the preheated oven for 45 minutes, stirring every 15 minutes to ensure the caramel coats the cereal evenly and it doesn’t burn.
Cool and Serve:
After baking, remove the caramel Crispix from the oven and allow it to cool completely on the baking sheet. Once cooled, break it into pieces and serve.
Store:
Store the caramel Crispix in an airtight container for up to a week. It also makes for a great homemade gift!
