Caprese Grilled Flank Steak Salad: A Fresh and Flavorful Summer Deligh

In a small bowl, combine olive oil, balsamic vinegar, garlic, oregano, salt, and pepper. Rub this marinade all over the flank steak and let it marinate for at least 30 minutes (or up to 2 hours for more flavor).
Preheat your grill or grill pan over medium-high heat. Once hot, grill the flank steak for about 4-5 minutes per side for medium-rare, or longer depending on your preferred level of doneness. Remove from the grill and let the steak rest for 10 minutes before slicing it thinly against the grain.
Assemble the Salad:

On a large platter or individual serving plates, arrange a bed of mixed greens. Top with sliced tomatoes, mozzarella, red onion, and fresh basil leaves.
Add the sliced flank steak on top of the salad.
Make the Dressing:

In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, pepper, and honey (if using). Drizzle over the salad.

Serve immediately with a drizzle of extra balsamic glaze or a sprinkle of parmesan cheese if desired. Enjoy!
