Preheat your oven to 375°F (190°C).
Slice the bell peppers in half and remove the seeds.
Arrange them in a baking dish, cut-side up.
Step 2: Cook the Meat & Seafood Mixture
In a large skillet over medium heat, melt ½ stick of butter.
Add chopped onions, celery (or bell pepper), and garlic. Sauté until softened.
Add the ground beef and hot sausage patty. Cook until browned, breaking it up as it cooks.
Stir in the chopped shrimp and crab meat. Cook for another 2–3 minutes until the shrimp turn pink.
Pour in half of the chicken broth and season with Cajun spice. Stir well.
Step 3: Create the Stuffing Mixture
Reduce heat to low and add the remaining butter.
Stir in the bread crumbs gradually, letting them absorb the juices.
If the mixture is too dry, add a bit more chicken broth. The consistency should be moist but not soggy.
Step 4: Stuff & Bake the Peppers
Spoon the filling generously into each bell pepper half.
Bake uncovered for 25–30 minutes, or until the peppers are tender.
For an extra crispy top, broil for 2–3 minutes before serving.
