Preheat the oven to 400°F (200°C).
Scrub the potatoes clean, then poke a few holes in each potato with a fork. Rub each potato with olive oil, and sprinkle with salt and pepper.
Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork. While the potatoes are baking, you can prepare the shrimp and steak.
Prepare the Cajun Shrimp
In a bowl, toss the shrimp with olive oil, Cajun seasoning, garlic powder, smoked paprika, salt, pepper, and lemon juice.
Heat a large skillet over medium-high heat. Once hot, add the seasoned shrimp and cook for 2-3 minutes on each side until the shrimp are pink and opaque.
Remove the shrimp from the skillet and set them aside. Garnish with fresh parsley before serving.
Prepare the Steak
Rub both sides of the steaks with olive oil and season with Cajun seasoning, garlic powder, salt, and pepper.
Heat a large skillet over medium-high heat. Add the steaks and sear for 3-4 minutes on each side for medium-rare, or longer if you prefer your steak more well-done.
During the last minute of cooking, add butter, crushed garlic, and thyme (if using) to the skillet. Spoon the melted butter over the steaks for extra flavor.
Assemble the Meal
Once the steaks are cooked to your desired level, remove them from the skillet and let them rest for a few minutes.
Slice the steak against the grain and serve alongside the Cajun shrimp and baked potatoes. Top the baked potatoes with your favorite toppings like sour cream, butter, cheese, and chives.
Serve
Plate the steak, shrimp, and baked potato on each dish. Serve immediately while everything is hot and fresh.
