Cajun Shrimp Loaded Baked Potato

Scrub the potatoes and pat them dry. Rub with olive oil and sprinkle with salt.
Pierce each potato a few times with a fork and place them directly on the oven rack.
Bake for 45–60 minutes, or until tender when pierced with a fork.
Step 2: Cook the Cajun Shrimp
While the potatoes are baking, heat olive oil in a large skillet over medium-high heat.
In a bowl, toss the shrimp with Cajun seasoning, garlic powder, smoked paprika, cayenne pepper, salt, and pepper.
Add the shrimp to the skillet and cook for 2–3 minutes on each side until pink and cooked through.
Stir in the lemon juice, then remove from heat and set aside.
Step 3: Assemble the Loaded Potatoes
Once the potatoes are cooked, slice them open and gently fluff the insides with a fork.
Top each potato with shredded cheddar cheese, allowing it to melt.
Spoon the cooked Cajun shrimp over the cheese, then add a dollop of sour cream or Greek yogurt.
Garnish with chopped green onions or chives.
