Cabbage with Carrots: A Flavorful Vegetarian Delight

Shred the cabbage and grate the carrot. Chop the onion and sweet peppers (if using), and mince the garlic.

Sauté the Onion and Garlic:

Heat the vegetable oil in a large pan or skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes, until softened.

Add the minced garlic and cook for another minute, stirring to avoid burning.

Cook the Vegetables:

Add the shredded cabbage, grated carrot, and sweet peppers to the pan. Stir well to combine with the onions and garlic. Cook for about 10 minutes, stirring occasionally, until the cabbage wilts and softens.

Add the Flour and Eggs:

Sprinkle the flour over the vegetables and stir it in to help thicken the mixture slightly. Let it cook for another 2 minutes.

Add the beaten eggs and stir them through the vegetable mixture. Cook for a further 3-5 minutes, until the eggs are fully cooked and the mixture has thickened.

Season and Serve:

Season the dish with salt and pepper to taste. Once everything is well-combined and cooked through, remove from the heat.

Serve hot as a standalone dish or as a side to your favorite meal.
