Wash and chop the cabbage, onion, garlic, carrots, celery, and bell pepper into bite-sized pieces.
Sauté the Aromatics:
In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté for 3-4 minutes until softened and fragrant.
Add the Vegetables:
Add the chopped carrots, celery, and bell pepper to the pot. Sauté for an additional 5 minutes, stirring occasionally.
Add the Cabbage and Tomatoes:
Add the chopped cabbage and diced tomatoes (with juices) to the pot, stirring to combine.
Simmer the Soup:
Pour in the vegetable or chicken broth, and stir in the dried thyme, oregano, salt, and pepper. Bring the soup to a boil. Once it’s boiling, reduce the heat and let it simmer for 30-40 minutes, or until the cabbage and other vegetables are tender.
Taste and Adjust Seasonings:
Taste the soup and adjust the seasonings as necessary. Add more salt, pepper, or herbs as desired.
Serve:
Serve hot, and enjoy this healthy, filling soup as a meal or snack.
