Butter Pecan Cake: A Rich, Nutty Delight

In a small pan over medium heat, melt 1 tablespoon of butter. Add the chopped pecans and toast them for 4-5 minutes, stirring frequently, until they are golden brown and fragrant. Remove from heat and let them cool.
2. Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
3. Mix the Wet Ingredients:

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. Combine the Dry Ingredients:

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the sour cream, beginning and ending with the flour mixture. Mix until just combined.
5. Add the Pecans:

Gently fold the toasted pecans into the batter. Be careful not to overmix.
6. Bake the Cake:

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean or with a few crumbs.
Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
7. Prepare the Cream Cheese Frosting:

In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar, 1/2 cup at a time, and beat until smooth.
Stir in the vanilla extract. If the frosting is too thick, add a tablespoon of heavy cream to reach your desired consistency.
8. Assemble the Cake:

Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of cream cheese frosting over the top.
Place the second cake layer on top and frost the top and sides of the entire cake with the remaining frosting.
Garnish the top with additional toasted pecans if desired.
9. Serve:

Slice and serve! This butter pecan cake is perfect for any occasion and will be a crowd-pleaser at your next gathering.
