Remove the casing from the Italian sausages and crumble the meat into small pieces.
In a skillet, cook the crumbled sausage over medium heat, stirring occasionally, until browned and fully cooked (about 5-7 minutes). Season with a pinch of salt and pepper.
Once cooked, remove from heat and set aside.
Prepare the Bread:
Preheat the oven to 375°F (190°C).
Slice the rustic loaf into 1-inch thick slices and arrange them on a baking sheet.
Lightly brush each slice with olive oil on both sides.
Toast the bread in the oven for 8-10 minutes or until golden brown and crispy.
Assemble the Bruschetta:
Once the bread slices are toasted, remove them from the oven.
While the bread is still warm, rub one side of each toast with the halved garlic clove to infuse a subtle garlic flavor.
Spoon the cooked sausage onto each slice of toast, distributing evenly.
Sprinkle a generous amount of shredded mozzarella or provolone cheese on top of each sausage-topped toast.
Melt the Cheese:
Return the assembled bruschetta to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
After removing the bruschetta from the oven, garnish with fresh basil or parsley, if desired.
Serve immediately while warm and cheesy!
