Broccoli Cheddar Fritters

Lightly steam the broccoli florets until tender, then chop them finely.

Mix the Ingredients:
In a bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, flour, eggs, garlic, salt, pepper, and red pepper flakes (if using). Stir until the mixture forms a thick batter.

Shape the Fritters:
Scoop small portions of the batter and shape them into patties, about the size of a golf ball.

Fry Until Golden:
Heat olive oil in a pan over medium heat. Fry the fritters for 2-3 minutes per side until crispy and golden brown.

Serve & Enjoy:
Remove from the pan and drain on paper towels. Serve warm with your favorite dipping sauce.
