Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper or lightly grease it.
In a medium bowl, combine the flour, powdered sugar, and softened butter. Mix until the dough comes together, and stir in the vanilla extract. Press the dough evenly into the bottom of the prepared baking dish to form a crust.
Bake the crust in the preheated oven for 12-15 minutes, or until lightly golden. Remove from the oven and set aside to cool slightly.
Make the Cream Cheese Filling:
In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the vanilla extract and eggs, one at a time, beating well after each addition.
Pour the cream cheese mixture over the cooled crust, spreading it evenly with a spatula.
Prepare the Blueberry Topping:
In a small saucepan, combine the blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat, stirring frequently, until the blueberries begin to break down and the mixture thickens, about 5-7 minutes.
Remove from heat and allow it to cool slightly.
Assemble and Bake:
Spoon the blueberry mixture over the cream cheese filling, spreading it gently with a spatula.
Bake the bars in the oven for 25-30 minutes, or until the cream cheese filling is set and the top is lightly golden. The center should be slightly firm but may jiggle just a little.
Chill and Serve:
Let the bars cool completely in the pan. Refrigerate for at least 2 hours, or until fully chilled, before cutting into squares and serving.
