Blackened Salmon Stuffed with Spinach & Parmesan

Cook the spinach in a skillet over medium heat until wilted. Drain off excess liquid.
In a bowl, combine the cooked spinach, cream cheese, Parmesan cheese, and garlic. Season with salt and pepper, then mix well.
Prepare the Salmon:
Using a sharp knife, create a pocket in each salmon fillet by slicing horizontally, being careful not to cut all the way through.
Stuff the pockets with the spinach and cheese mixture.
Season the Salmon:
In a small bowl, mix together the paprika, garlic powder, onion powder, black pepper, and salt.
Rub the seasoning mixture evenly over the tops of the salmon fillets.
Cook the Salmon:
Heat olive oil in a skillet over medium-high heat.
Sear the salmon fillets for 2-3 minutes per side, or until the tops are blackened and crispy.
Transfer the salmon to a preheated oven at 350°F (175°C) and bake for 10-12 minutes, or until fully cooked.
Serve:
Serve hot with lemon wedges on the side for a fresh, zesty finish.
