Pat the salmon fillets dry with paper towels. Make a horizontal slit along the side of each fillet to create a pocket for the stuffing. Be careful not to cut all the way through.
Season the Salmon:
In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
Rub the seasoning mixture evenly over the outside of each salmon fillet.
Prepare the Stuffing:
In a separate bowl, combine the chopped spinach, grated Parmesan cheese, cream cheese, and lemon juice. Mix well until the ingredients are well-combined and form a creamy stuffing mixture.
Stuff the Salmon:
Spoon the spinach and Parmesan mixture into the pockets of each salmon fillet, pressing gently to fill them.
Cook the Salmon:
Heat a non-stick skillet over medium-high heat. Add the stuffed salmon fillets and cook for about 3-4 minutes on each side until the salmon is golden and blackened.
Transfer the skillet to the oven and bake for 8-10 minutes, or until the salmon is cooked through and reaches an internal temperature of 145°F (63°C).
Serve:
Garnish the blackened salmon with fresh parsley and serve with your favorite side dish, like roasted vegetables or rice.
