Blackened Salmon Stuffed with Spinach & Parmesan

Preheat your oven to 375°F (190°C).
In a small bowl, mix smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Rub this seasoning mixture onto both sides of each salmon fillet.
Step 2: Prepare the Filling
In a pan, sauté the spinach until wilted, then remove from heat.
In a bowl, combine sautéed spinach, Parmesan cheese, mozzarella cheese, and minced garlic. Mix well.
Step 3: Stuff the Salmon
Using a sharp knife, slice each salmon fillet horizontally to create a pocket, being careful not to cut through.
Stuff each salmon fillet with the spinach and cheese mixture.
Step 4: Sear and Bake
Heat olive oil in an oven-safe skillet over medium heat.
Sear the stuffed salmon for 2-3 minutes per side until golden brown.
Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is fully cooked and flaky.
Step 5: Make the Butter Sauce
In a small saucepan, melt butter over low heat.
Stir in lemon juice, mixing well.
Step 6: Serve and Enjoy!
Drizzle the buttery lemon sauce over the stuffed salmon before serving.
Serve warm with your favorite side dishes.
