Blackened Salmon Stuffed with Spinach & Parmesan

Set your oven to 375°F (190°C).
2. Season the Salmon
In a small bowl, mix paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Rub the spice mixture generously onto each salmon fillet for a bold, blackened crust.
3. Prepare the Filling
In a bowl, combine sautéed spinach, Parmesan cheese, mozzarella cheese, and minced garlic.
Mix well until fully incorporated.
4. Stuff the Salmon
Using a sharp knife, slice each salmon fillet horizontally to create a pocket, being careful not to cut all the way through.
Stuff each pocket with the spinach and cheese mixture.
5. Sear the Salmon
Heat olive oil in an oven-safe skillet over medium heat.
Sear the salmon for 2-3 minutes per side until golden brown.
6. Bake the Salmon
Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is fully cooked and flaky.
7. Make the Lemon Butter Sauce
In a small saucepan, melt butter and stir in lemon juice.
Drizzle over the stuffed salmon before serving.
