Blackened Ribeye with Creamy Cajun Shrimp, Mashed Potatoes, and Grilled Corn: A Flavor-Packed Feast!

Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are fork-tender.
Drain the potatoes and return them to the pot. Add the butter, milk, and sour cream (if using). Mash the potatoes until smooth and creamy. Season with salt and pepper to taste. Set aside and keep warm.
Prepare the Grilled Corn:

Preheat your grill to medium-high heat.
Brush the corn with butter and season with salt, pepper, and smoked paprika.
Place the corn on the grill and cook for 10-12 minutes, turning occasionally, until the kernels are tender and slightly charred. Remove from the grill and set aside.
Season and Cook the Ribeye:

In a small bowl, mix together the smoked paprika, garlic powder, onion powder, thyme, cayenne pepper, salt, and black pepper.
Rub the seasoning mix all over the ribeye steaks.
Heat olive oil in a cast-iron skillet or grill pan over medium-high heat. Once hot, add the ribeye steaks and cook for 4-5 minutes per side for medium-rare, or longer if desired for your preferred doneness. Remove the steaks from the skillet and let them rest for a few minutes before serving.
Make the Creamy Cajun Shrimp:

In a large skillet, heat olive oil and butter over medium heat.
Add the shrimp to the skillet and sprinkle with Cajun seasoning, smoked paprika, garlic powder, and onion powder. Cook for 2-3 minutes per side until the shrimp are pink and opaque.
Add the heavy cream and chicken broth, stirring to combine. Let the sauce simmer for 2-3 minutes until it thickens slightly. Taste and adjust the seasoning as needed. Garnish with fresh parsley.
Assemble the Dish:

On each plate, place a generous serving of mashed potatoes, followed by a blackened ribeye steak.
Spoon the creamy Cajun shrimp over the steak and potatoes, allowing the sauce to pool around the edges.
Serve with a side of grilled corn on the cob.
