Best Pimento Cheese Recipe: Creamy, Savory, and Full of Flavor

In a large mixing bowl, combine the finely shredded sharp cheddar cheese and softened cream cheese. The cream cheese should be softened at room temperature to make mixing easier.
Add the Mayonnaise and Seasonings:

Add the mayonnaise (or Greek yogurt for a lighter version) to the cheese mixture. Stir in the Dijon mustard, garlic powder, onion powder, smoked paprika, and cayenne pepper (if using). Mix everything together until well combined.
Incorporate the Pimentos:

Drain and chop the pimentos, then fold them into the cheese mixture. Be sure to mix gently to avoid breaking up the pimentos too much.
Season to Taste:

Taste the pimento cheese and adjust the seasoning with salt and pepper as needed. You can also add more smoked paprika or cayenne for extra flavor if desired.
Chill and Serve:

Once everything is mixed, cover the bowl with plastic wrap and refrigerate the pimento cheese for at least 1 hour to allow the flavors to meld together. Serve chilled with crackers, toasted bread, or vegetable sticks, or spread it on a sandwich for a delicious treat.
