Heat 1 tablespoon of oil in a large pot over medium-high heat.
Once hot, add the beef and sear it for about 5 minutes on each side, or until it’s golden brown.
Remove the beef from the pot and set it aside.
Step 2: Cook the Onions and Garlic
In the same pot, heat the remaining 1 tablespoon of oil.
Add the chopped onion and cook, stirring occasionally, until softened, about 3 to 5 minutes.
Add the garlic and cook for another minute until fragrant.
Step 3: Slow Cook the Beef
Return the browned beef to the pot.
Add 1 cup of water, oregano, and sliced carrots.
Cover the pot and reduce the heat to low.
Slow cook for 90 minutes, checking periodically to ensure the meat stays moist. Add more water if necessary to prevent it from drying out and burning.
Step 4: Serve
Once the meat is tender, remove it from the pot and slice. Serve with the cooked vegetables and juices from the pot.
